Monascus yellow pigment is a kind of food pigment which is refined from rice and soybean by submerged fermentation, sulfonated by sulfide and dried.
Features: this product has the characteristics of high purity, good photothermal stability, wide range of pH value (pH3~14), good water solubility, safety, non-toxicity and convenient use.
Properties: Yellow-brown liquid or orange-yellow to yellow-brown powder is easily soluble in water and alcohol, and the solution is transparent without precipitation, bright yellow and fluorescent.
Usage: directly dissolve it in water or alcohol, then directly add it into the ingredients for mixing, and mix it evenly. The dosage can be added according to the required color tone, and the appropriate amount can be added according to GB2760. Please use it as soon as possible after opening or keep it in a closed place.

Shelf Life And Storage: it should be sealed, placed in a ventilated, cool and dry place, protected from light and heat, and prohibited from being mixed with toxic substances. Under the condition of complete packaging and unopened, the shelf life of powder is 24 months and that of liquid is 6 months.
Application: It is widely used in cooked meat products (such as salted chicken, etc.), marinated eggs, seasoned chicken essence, cakes, fruit and vegetable juice (pulp) drinks, protein drinks, carbonated drinks, flavored drinks, mixed wine, jelly, instant rice flour products, etc. It is an ideal substitute for chemically synthesized pigments.
